This has to be one of the easiest dinners EVER! It literally takes me 5 minutes to throw together in the morning, and it’s ready by dinnertime. The pork comes out salty, tangy, tender and delicious, and the kids absolutely love it! You can serve it on a sprouted grain or whole wheat bun or just serve it on a bed of slaw for a low-carb dinner. This recipe makes enough for my family of six with plenty leftovers for lunch the next day.
2lb pork tenderloin
1½ teaspoons salt
1 teaspoon black pepper
12oz jar of mild banana pepper rings
Put all ingredients into a crockpot, and cook on high for 4-6 hours or on low for 8-10 hours. The longer it cooks, the more tender and flavorful it will be. When it is done, use an electric beater on the lowest setting to shred the meat right in the crockpot. It couldn’t be any easier!
