Refreshing Summer Cucumber Salad

This is an example of a summer staple from my childhood which I’ve made healthier. When my mother made this, it had sour cream, lots of sugar and white vinegar. Now it has Greek yogurt which adds protein and apple cider vinegar which promotes healthy digestion. I also replaced the sugar with a little stevia to keep the sweetness without the calories. It is super easy to throw together as a no-carb side dish for a summer grill out.

Cucumber Salad

Ingredients:

4-5 large cucumbers

1 small sweet onion

1 cup plain Greek yogurt

½ cup apple cider vinegar

1 ½ teaspoons salt

1 teaspoon pepper

6-9 drops of liquid stevia

 

Wash and peel the cucumbers. Slice them into thin (1/4 inch) discs. Peel the onion, and slice it very thinly as well, either in full or half discs. Break apart the onion slices, and throw them into a large bowl with the cucumbers. It helps to have a bowl with a cover that seals well, as it makes it easier to mix all the ingredients in the end. Put the remaining ingredients into a separate bowl and mix until thoroughly combined. Add the dressing to the larger bowl containing the cucumbers and onions. Cover and shake vigorously to evenly coat the cucumbers and onions with the dressing. Taste and adjust salt and stevia if needed. Let this salad marinate in the refrigerator for at least one hour. The longer it marinates, the better it is.
