Chicken lettuce wraps are one of my favorite dishes to order when we go out for Asian inspired food. We spent so many Friday nights at a local eatery that I was inspired to recreate the lettuce wraps at home, and of course make them healthier. I love to have an arsenal of quick, healthy dinner ideas on hand for all of those busy weeknights, and this is one of my kids’ favorites. What kid doesn’t love a dish they get to assemble themselves? If your kids like spice, feel free to kick it up a notch. If not, simply omit the spicy ingredients, and enjoy. These lettuce wraps are just as delicious either way. Serve with a side of rice.
1lb ground chicken
1 small onion finely chopped
8oz can water chestnuts drained and finely chopped
1 cup shitake mushrooms finely chopped
3 small carrots peeled and diced
2 tablespoons fresh minced garlic
½-1 teaspoon red pepper flakes (depending on how spicy you like it)
1 teaspoon salt
2 tablespoons rice vinegar
¼ cup low sodium soy sauce
3 tablespoons honey
1 tablespoon sesame oil
1-2 tablespoons chili paste (depending on how spicy you like it)
¼ cup hoisin sauce
2 tablespoons peanut butter
2 teaspoons fresh grated ginger
At Serving Time
2 heads Boston lettuce (10-12 large leaves)
¼ cup chopped peanuts
¼ cup chopped green onions
Heat the oil in a medium skillet to medium high heat. Add the onion, water chestnuts, mushrooms, carrots, garlic, and red pepper flakes to the pan. Sauté the vegetables for 3-5 minutes or until translucent. Add the ground chicken and salt. Break up the meat in the pan and brown.
While the chicken is browning, prepare the sauce in a separate bowl. Whisk together the vinegar, soy sauce, honey, sesame oil, chili paste, hoisin sauce, peanut butter, and fresh ginger until thoroughly combined.
When the chicken is almost cooked through, add the sauce to the pan. Stir to coat the meat mixture. Reduce heat and simmer for an additional 3-5 minutes or until the sauce is heated through and the chicken is completely cooked.
Remove from heat. Serve in lettuce wraps garnished with the chopped peanuts and green onions. Enjoy with a side of rice.
